It is an object of the present invention to provide a method for imparting photo-thermal resistance to a cocoa butter having weak photo-thermal resistance by a simple method. Photo-degradation resistance can be imparted to the cocoa butter by performing a defection treatment using a phospholipase. When white chocolate was prepared using the obtained cocoa butter, photo-thermal degradation was remarkably suppressed. Any kind of phospholipase can be used, but the effect is remarkable especially when phospholipase A2 is used, which is preferable.본 발명은 광열화 내성이 약한 코코아 버터에 대해 간이한 방법으로 광열화 내성을 부여하는 방법을 제공하는 것을 과제로 한다. 포스폴리파아제를 사용한 탈검 처리를 행함으로써 코코아 버터에 광열화 내성을 부여할 수 있다. 얻어진 코코아 버터를 사용하여 화이트 초콜릿을 조제한 경우 광열화가 현저히 억제되었다. 포스폴리파아제는 어떠한 종류라도 사용할 수 있지만, 특히 포스폴리파아제 A2를 사용한 경우에 효과가 현저하여 바람직하다.
