CONSTITUTION: A vegetable salting apparatus including a salty water producing device comprises the following: a salty water tank(1) including a salinity meter(2), and storing produced salty water； a feed pump(10) operated by an operation control panel generating a control signal to discharge the salty water； a feed line(12) supplying the salty water to a salting tank； a returning line(20) discharging the salty water from the salting tank； and a salty water producing container(6) for temporarily storing the salty water discharged from the returning line, including an aeration tank for rapidly dissolving salt to water.본 발명은 염수를 제조하는 소금이 저장된 소금 탱크(3)를 통해 소금을 자동 투입하면서 염수를 제조할 수 있고, 염수가 제조된 후에도 적정 농도를 맞추기 위해 바이패스 라인(14)을 부가해 피드백(Feedback)공정을 구현함은 물론, 염수 탱크(1)에 저장된 염수를 공급해 배추를 절인 후 다시 회수하면서 반복적인 사용이 이루어지더라도 항상 최적의 농도로 맞춘 염수를 지속적으로 공급할 수 있으므로, 염수 농도 저하로 인한 공정 중단이 없이 배추의 절임 상태를 최적으로 유지해 생산성을 크게 높이고, 염수 제조 공정과 배추 절임 공정의 공유로 전체적인 시스템 구성도 최적화할 수 있는 특징을 갖는다.
