PURPOSE: An antioxidant-carrier complex using a copolymer is provided to enhance stability from outer environmental change and structural stability. CONSTITUTION: An antioxidant-carrier complex contains a carrier which is formed by self-assembly of a copolymer containing polyalkylene glycol and polyester； and an antioxidant encapsulated in the carrier. The weight ratio of the polyalkylene glycol and polyester is 1:99-99:1. The polyalkylene glycol and polyester of the copolymer are directly combined or combined by a liner. The linker is a C3-C30 organic compound with two or more functional groups. The linker is gallic acid, aleuritic acid, serinol, cyanuric acid, or 7-hydroxycoumarinyl-4-acetic acid. The antioxidant is polyphenols, flavonoid, or anthocyanine. A food composition contains the antioxidant-carrier complex.본 발명은 폴리알킬렌글리콜 및 폴리에스터를 포함하는 공중합체가 자기조립되어 형성된 전달체； 및 상기 전달체 내에 봉입된 항산화물질을 포함하는 항산화물질-전달체 복합체에 관한 것으로, 본 발명의 복합체를 이용하면 항산화물질의 구조적 안정성과 외부 환경 변화로부터의 안정성을 증진시킬 수 있으며, 봉입된 항산화물질의 방출속도를 조절함으로써 적은 양으로도 효율적으로 항산화 활성을 극대화시킬 수 있다.
