PROBLEM TO BE SOLVED: To provide lactic acid bacteria which can stop a fermentation at a low temperature about 5°C or less although it ferments quickly at room temperature, and can impart moderate viscosity by the fermentation, if it is used for production of pickles.SOLUTION: Leuconostoc mesenteroides No.66 strain (NITE P-01568) can quickly ferment vegetables at about 10-37°C, and moreover, can stop the fermentation without growing at 5°C, and further can impart moderate viscosity by the fermentation to use it suitably for production of pickles.
