Apparatus (20) for the production of pastry products of broken dough, in particular biscuits, containing edible particles, where the apparatus comprises: - a forming roller (21) having a surface (21a) on which a plurality of molds are formed (25) of forming the mass of broken dough, wherein said mass of broken dough comprises a first fraction (23) of a plurality of edible particles, - a feeder roller (7) cooperating with the forming roller (21) to press said mixture of broken dough mass (3) comprising said first fraction (23) of edible particles to fill said molds (25), forming a plurality of first semi-finished pastry products (29), each in a mold (35) respective, - a conveyor belt (13) cooperating with the forming roller (6) to extract said first semi-finished products (29) from their respective molds (25), where the apparatus is characterized curled in that each of said molds (25) comprises a receptacle (26) that constitutes a receiving seat for said dough mixture (3) comprising said first fraction (23) of the plurality of edible particles, where each receptacle (26) is formed on the surface (21a) of the forming roller (21) with dimensions substantially comparable to those of the desired final pastry products, and at least one cavity (27), preferably a plurality of cavities (27), formed in said receptacles (26 ) and where each constitutes a receiving seat for an edible particle of a second fraction (24) of said plural edible particles, where said first semi-finished products (29) therefore contain edible particles of said first fraction (23) substantially incorporated in said mixture of dough (3), edible particles of said second fraction (24) substantially elevated with respect to the surface of the mixture of lamase (3), and because it comprises: - a dispensing station (22) for dispensing, according to a predetermined distribution, said second fraction (24) of edible particles in said molds (25) not yet occupied by said mixture of mass of broken dough (3) compri
