The present disclosure concerns a composition comprising yeast cells and at least one polyphenols having a molecular weight above 620 Da, the polyphenols are adsorbed and retained in the cytoplasm of the yeast cell. La présente invention concerne également l'utilisation de la composition dans les domaines cosmétique, dermatologique, nutritionnel et/ou pharmaceutique, ainsi que dans la vinification afin de protéger le vin contre l'oxydation, ce qui permet de préserver la qualité, la couleur et les arômes du vin, et comme alternative au vieillissement du vin sur lies.
