PROBLEM TO BE SOLVED: To provide a pretreatment method that is preliminary treatment that is imparted to fresh foods such as vegetable, fruit, livestock meat, and seafood, in which palatability of the fresh foods is raised, and the treated fresh foods can be made to be in a state suitable for cooking.SOLUTION: A pretreatment method of fresh foods includes: an immersion process in which fresh foods are immersed in salt water; and a heating process in which the fresh foods after the immersion process are steamed. The pretreatment method of fresh foods may includes a freezing process in which the heated fresh foods are frozen after the heat process.
