PROBLEM TO BE SOLVED: To provide a method for producing harusame and harusame produced therefrom in which the freezing and thawing process can be omitted.SOLUTION: The method for producing harusame according to the present invention includes: a step to knead a mixture comprising starch, cellulose ether and water； a step to produce noodle from the dough； a step to refrigerate the noodle produced； and a step to dry the refrigerated noodle to make it into a product. By including cellulose ether, a texture similar to the traditional harusame can be realized without going through the freezing and thawing process.
