PURPOSE: An antimicrobial composition containing a synthesized non-allergenic urushiol derivative as an active ingredient is provided to secure the strong antimicrobial effect of the composition. CONSTITUTION: An antimicrobial composition for preventing the food spoilage contains a non-allergenic urushiol derivative with the antibacterial activity for food decomposition bacteria as an active ingredient. The non-allergenic urushiol derivative is 3-pentylcatechol or 3-eicosylcatechol. The food decomposition bacteria are selected from the group consisting the following: gram-positive bacteria including staphylococcus aureus and staphylococcus epidermidis gram-negative bacteria including escherichia coli, pseudomonas aeruginosa, and bacillus subtilis and yeast.본 발명은 합성 우루시올 유도체에 관한 것으로, 보다 구체적으로는 옻나무 (Rhus verniciflua Stokes) 수액의 주성분으로 알러지 유발 원인 물질인 우루시올의 기본 골격 중 측쇄탄화수소의 길이를 달리하여 즉 천연 우루시올 유도체의 측쇄탄화수소보다 더 길거나 더 짧은 측쇄탄화수소를 갖도록 알러지 비유발성으로 합성된 우루시올 유도체를 유효성분으로 포함하는 식품부패방지용 항균조성물 및 병원균 예방 및 치료용 항균조성물에 관한 것이다.
