The present invention relates to a method of producing tablet candies having the effect of preventing alcoholic fatty liver by comprising an ethanol extract of Sedum sarmentosum. In the present invention, alcohol and Sedum sarmentosum tablet candies are administered to rats over 8 weeks, and the effect of the Sedum sarmentosum tablet candies as a functional health food was evaluated by changes in alcoholic fatty liver biomarkers. The alcohol administered group had a decrease in body weight, compared to the control group. Decrease in body weight was observed in the positive control group and the Sedum sarmentosum tablet candy treated group as well, however the decrease was significantly smaller, compared to the ethanol administered group. In the alcohol administered group, weight of liver tissues and fat concentration in liver tissues were increased, however when the Sedum sarmentosum tablet candies and alcohol were administered together, the expression of alcoholic fatty liver was significantly reduced. Vacuolation of liver cells was observed in periportal area in the ethanol administered group and the Sedum sarmentosum tablet candy administered group. Vacuolation of liver cells was observed in the control group as well, however the vacuolation was diffuse, and the vacuoles were typically small, compared to the alcohol administered group. Based on these characteristics, vacuolation observed in the control group was assumed to be glycogen deposit, not fatty degeneration. The positive control material was shown to prevent alcohol-induced fatty liver.
