PROBLEM TO BE SOLVED: To provide a water-soluble flavonoid composition which can be prepared by using a simple method, and is improved in stability and water solubility of hardly soluble flavonoid.SOLUTION: The water-soluble flavonoid composition is obtained by using a preparing method comprising: the step (1) of mixing the hardly soluble flavonoid with &beta-cyclodextrin in an alkaline water solution, a water-organic solvent mixed solution or an aqueous solvent under a supercritical condition and the step (2) of adding &alpha-glucosyl hesperidin to the mixture obtained in the step (1).
