To provide a liquid nature-modifying apparatus having a very simple configuration, and capable of modifying a liquid nature of a beverage dispensing with replacement to reduce running cost.SOLUTION: An inner surface of a watershoot 11 in which a beverage flows is a concavo-convex surface 12 by forming a predetermined convexoconcave. It is preferable that an approximately regular convexoconcave having an average ratio of a wave height to a wave length in a range of 1 μm or less of a wave length of 0.0001 or more is formed as the predetermined convexoconcave. The liquid nature of the beverage 13 can be modified better than heretofore by flowing the beverage 13 onto the concavo-convex surface 12 of the water shoot 11.
