A retort chamber and product carrying magazine suitable for retaining product during thermal processing in a full water immersion retorting apparatus, the chamber and magazine comprising:a cylindrical retaining member, said retaining member including a hollow core to contain and direct heat-transfer water and comprising a wall with a plurality of perforations extending through said wallthe retaining member including one or more product bearing cassettes, housed within the retaining member and located between said inner wall and the outer diameter of the retaining member.
