PROBLEM TO BE SOLVED: To provide an apparatus for curing vegetables safely and directly carrying the original taste of vegetables or the like onto a dining table because vegetables are raised in the fields of farmhouses before they are served on the table of a home, and it takes a long time before the vegetables are served on the table excluding home gardening and vegetables have to pass through several distribution stages, and in consequence, the freshness of vegetables differs from that of vegetables harvested in the field while furthermore causing anxiety about a sanitary aspect, agricultural chemicals, radioactive contamination, etc.SOLUTION: A substantially cylindrical curing container with the hollow interior is formed such that an upper cylinder body and a lower cylinder body are vertically separated and that the upper cylinder body is insertable into the lower cylinder body to form one cylindrical curing container. The body surface of the cylindrical curing container is provided with a plurality of penetrating holes. A curing body container is provided with a plurality of cutout parts in a surface layer part mounting surface, and provided with a water retaining sponge layer below the surface layer part mounting surface. The water retaining sponge layer is provided with cutout parts in the same positions as the cutout parts in the surface layer part mounting surface. The cylindrical curing container is stored in an inserted manner into a slotted hole in the surface layer part mounting surface, and the sponge layer in the container is supplied with a liquid fertilizer and water.
