This utility model relates to collecting of sap from Nipa (scientific name Nipa fruiticans Wurmb) for producing natural sweetener. It further provides the best time interval to collect the Nipa sap. The present utility model is being prepared by cleaning and sanitizing the spadex, followed by cutting the cleaned spadex. The flexible pouches were wrapped around the spadex and held by rubber bands for a period of 5 and l2 hours. After harvesting the sap, the flexible pouches were individually tied and saved for the processing of Nipa natural sweetener.This collection method minimizes quality deterioration of nipa sap. Using this method clear nipa sap can be obtained when using a 5-hour collection period.
