PURPOSE: A process for preparing spices containing medicinal herbs, seaweeds, plants and other healthful materials is provided, which spices is useful for improving health of old people and children, for reducing weight of overweight people, and for increasing immunity. CONSTITUTION: The process for preparing spices containing medicinal herbs, seaweeds, plants and other healthful materials comprises the steps of: extracting the healthful materials including medicinal herbs, seaweeds, healthful plants and other healthful materials listed in annexed papers 1 to 23 to prepare 440 kg of healthful material juice; mixing 440 kg of healthful material juice with 100 kg of a mixture of Japanese apricot(maesil), ginger, grape, pear, apple, banana, pine apple, melon, watermelon, persimmon, apricot, peach and plum in the predetermined ratio, and 289 kg of grains; naturally fermenting the mixture at 5 to 38 deg. C for 1 to 3 months to produce 820 kg of healthful materials; mixing 820 kg of healthful materials with the ext
