PURPOSE: A beef-bone soup manufacturing apparatus and a beef-bone soup manufacturing method using the same are provided to actively mix beef bones with water (beef-bone soup) inside a pressure vessel, thereby quickly raising temperature inside the vessel. CONSTITUTION: A beef-bone soup manufacturing apparatus includes a pressure vessel (110), a strainer, a cover (130), a heating part (140), a blood drain pipe (150), a bubble generating part (160), and a mixing part (170). Beef bones are laid on the strainer in the housing part of the vessel. The cover has a pressure valve (132) switching steam according to pressure inside the vessel. The heating part inside the vessel heats the vessel. The bubble generating part is connected to the blood drain pipe with a flow path, and jets bubbles to the beef bones in water in order to stir the beef bones. An outlet at the upper inner side of the vessel is connected to the blood drain pipe. The mixing part feeds beef-bone soup boiling inside the vessel to the outlet in order to forcibly stir the beef-bone soup inside the vessel.본 발명은 곰탕 제조장치 및 이를 이용한 곰탕 제조방법에 관한 것으로, 사골과 물이 투입되어 사골로부터 핏물을 빼거나 핏물이 제거된 사골을 가열하여 사골 국물을 만드는 압력용기와 상기 압력용기에 투입되는 사골을 압력용기로부터 용이하게 꺼낼 수 있게 하는 거름망과 상기 압력용기의 상부에 설치되어 개폐되는 커버와, 상기 압력용기를 가열하는 히팅부와, 상기 압력용기의 바닥과 연결되어 사골로부터 스며나온 핏물을 압력용기의 외부로 배출하거나 또는 우려진 사골 국물을 혼합/이송시키는 통로로 사용되는 핏물 빼기관과, 상기 핏물 빼기관과 유로로 연결되어 사골과 물이 채워진 압력용기의 내부로 기포를 분사해 사골을 교반하는 기포 발생부와 상기 핏물 빼기관과 유로로 연결되어 사골 국물을 혼합시켜 사골 국물에 대한 대류가 활발히 이루어지도록 하는 혼합부 및 상기 히팅부, 기포 발생부, 혼합부의 작동을 전반적으로 제어하는 제어부를 포함하는 곰탕 제조장치가 개시된다. 이로부터, 압력용기의 가열하는 시간을 단축해 압력용기를 가열하기 위해 소모되는 에너지를 절약할 수 있을 뿐만 아니라 우수한 품질을 갖는 곰탕을 제조할 수 있다.
