PROBLEM TO BE SOLVED: To provide applications of sequence information relating to pyranosone dehydratase.SOLUTION: A use of pyranosone dehydratase in the conversion of AF (1,5-anhydro-D-fructose) to APP (ascopyrone P) and microthecin and the conversion of glucosone to cortalcerone is related.
