PROBLEM TO BE SOLVED: To provide a method of processing oysters which enables long-term storage while avoiding extra water from getting out of the oysters during cooking.SOLUTION: The method includes a washing step 1 for washing shelled oysters with water, a heat treatment step 2 for heating the washed oysters with superheated steam, a drying step 3 for putting the heated oysters into a dryer for drying to make dried oysters, and a freezing step 4 for freezing the dried oysters. In the drying step, the water content of the oysters is 60 to 80%.
