The present invention relates to a method to pack fresh-cut fruits using a mixture gas and a micro-perforation film and, more specifically, relates to a method to pack fresh-cut fruits using a mixture gas and a micro-perforation film using a mixture gas including nitrogen, oxygen, and carbon dioxide； and a micro-perforation film with increased permeability to extend a shelf life of the fresh-cut fruits. According to the present invention, the method comprises: (a) a fruit preparation step of selecting a type of fruit and preparing fresh fruits in accordance with a grade； (b) a sterilization step of sterilizing the prepared fruits； (c) a cutting step of cutting or peeling the sterilized fruits； (d) a washing step of immersing the cut fruits in an immersion liquid to wash the cut fruits； (e) a dewatering step of dewatering the washed cut fruits； (f) a cooling step of cooling the dewatered cut fruits； and (g) a gas filling and packing step of filling the cut fruits with the mixture gas including nitrogen, oxygen, and carbon dioxide, and packing the cut fruits with the micro-perforation film.본 발명은 혼합가스 및 미세천공필름을 이용한 신선절단과일의 포장방법에 관한 것으로서, 더욱 상세하게는 질소, 산소 및 이산화탄소로 이루어지는 혼합가스와 투기성을 증진시킨 미세천공필름을 이용하여 신선절단과일의 보존기간을 연장할 수 있는 혼합가스 및 미세천공필름을 이용한 신선절단과일의 포장방법에 관한 것이다.상기의 과제를 해결하기 위하여 본 발명에 따른 혼합가스 및 미세천공필름을 이용한 신선절단과일의 포장방법은 a) 과일 종류를 선택하고 등급에 따라 신선과일을 준비하는 과일 준비단계； b) 상기 준비된 과일을 소독하는 소독단계； c) 상기 소독된 과일을 자르거나 탈피하는 절단단계； d) 상기 절단 과일을 침지액에 침지하여 세척하는 세척단계； e) 상기 세척된 절단 과일을 탈수시키는 탈수단계； f) 상기 탈수된 절단 과일을 냉각시키는 냉각단계； 및 g) 상기 냉각된 절단 과일을 질소, 산소 및 이산화탄소로 이루어진 혼합가스로 충전하고 미세천공필름으로 포장하는 가스충전 포장단계를 포함하여 이루어지는 것을 특징으로 한다.
