The present invention relates to a method for producing soybean paste including a ginseng extract mixed and extracted by using a ginseng byproduct, and to soybean paste. More specifically, a ginseng solution mixed with a ginseng extract and a natural ingredient extract extracted by boiling various sorts of natural ingredients is mixed and aged with a fermented soybean mixture mixed with crushed fermented soybean malt and boiled barley rice. Moreover, according to the present invention, a large quantity of ginsenoside Re which is beneficial to a human body is contained in soybean paste, and thus an antibacterial activity is ensured by means of ginsenoside Re. Compared to general soybean paste, the soybean paste of the present invention is not easily denatured even when a smaller quantity of salt is included therein. Also, a large quantity of essential amino acid contained in dried Pollack, kelp, lotus leaves, mulberry, Kalopanax branches, and several sorts of mineral components and vitamin components contained in elm bark are included in soybean paste.
