The present invention relates to an antioxidant composition intended for oxidative stabilisation of marine, animal or plant oils, in particular those rich in polyunsaturated fatty acids. To that end, the invention proposes an antioxidant composition, comprising (a) a mixture essentially made up of phospholipids, and (b) at least one other antioxidant compound, characterised in that the antioxidant composition comprises carnosic acid and in that the mixture essentially made up of phospholipids (a) has: - a total phospholipid content level greater than or equal to 85%, - a phosphatidylcholine content level greater than or equal to 40%, - a carbohydrate and glycolipid content level less than or equal to 8%, by weight relative to the total weight of said mixture.
