The present invention relates to fermented Sorghum bicolor which is obtained by conducting, using a Sorghum bicolor extract, incubation by Aspergillus oryzae as a starter and an enzymatic reaction by saccharification enzyme. The fermented Sorghum bicolor has functions of suppressing expression of vascular cell adhesion molecule 1 (VCAM-1), intercellular adhesion molecule 1 (ICAM-1), and cyclooxygenase-2 (COX-2) and functions of promoting expression of heme oxygenase 1 (HO-1), thereby showing effects of treating, preventing, or ameliorating various inflammatory diseases.
