PROBLEM TO BE SOLVED: To provide an acidic emulsion seasoning using a crosslinked starch, having low lipid content and having emulsified white turbidness, texture and smooth physical properties.SOLUTION: There is provided an acidic emulsion seasoning having lipid content of 10 mass% or less and protein content of 0.5 to 5 mass%, containing a crosslinked starch derived from rice having a volume average particle diameter of starch particles of 5 to less than 8 μm, fine crystal cellulose and/or fermented cellulose having a volume average particle diameter of 5 to 20 μm, where the content of the crosslinked starch derived from rice is 10 to 100 pts.mass based on 1 pts.mass of the total content of the fine crystal cellulose and/or the fermented cellulose and viscosity at 25°C is 0.1 to 10 Pa s. There is provided an acidic emulsion seasoning having the content of the fine crystal cellulose and/or fermented cellulose of 0.01 to less than 2 mass% and further containing dextrin of 0.01 to 1 mass%.SELECTED DRAWING: None
