A device for extracting de-epithelialised connective tissue, comprising a handle (1) and a cutting head (2) for removing a strip of soft tissue by cutting. The head (2) comprises: a stop (5) joined perpendicularly to the end of the handle (1) in order to limit the penetration of the head (2) into the soft tissue to be cut； two parallel support flanges (6), which protrude perpendicularly from the stop (5) and which comprise one or more free ends (11) respectively； a distal cutting element (8), firmly and perpendicularly joined to the respective free ends (11), for removal of a strip of connective tissue (12) from the soft tissue by cutting； and an intermediate cutting element (7) firmly and perpendicularly joined between the support flanges (6) and located between the distal cutting element (8) and the stop (5), for removal of a strip of epithelium (10) from the soft tissue by cutting.
