PROBLEM TO BE SOLVED: To provide a method for producing stable caramel powder having favorable flavor and free from blocking and/or caking: and to provide caramel powder obtained by the method.

SOLUTION: The method for producing caramel powder comprises: using saccharide and a dairy product as raw material, heating a mixture prepared so as to have 45-65 mass% of non-fat solid and 30-50 mass% of saccharide solid except for milk-derived saccharide each based on raw material solid under pressure at 90-140°C for 0.01-300 min to obtain caramel, and thereafter, subjecting the thus obtained caramel to spray drying.
