PROBLEM TO BE SOLVED: To provide a raw material liquid having a bitter taste with improved quality, a beverage, and a method relative thereto.SOLUTION: The method includes contacting a first raw material liquid which contains &alpha； acid and iso &alpha； acid with a microbial cell body, so that a second raw material liquid having a bitter taste with more improved quality in comparison with bitter taste of the first raw material liquid can be manufactured. The method may further include manufacturing a beverage using the second raw material liquid.【課題】質的に改善された苦味を有する原料液、飲料及びこれらに関する方法を提供する。【解決手段】本発明に係る方法は、α酸及びイソα酸を含む第一の原料液を微生物細胞体と接触させることにより、前記第一の原料液に比べて苦味の質が改善された第二の原料液を製造することを含む。この方法は、前記第二の原料液を使用して飲料を製造することをさらに含むこととしてもよい。【選択図】図１
