Process for obtaining triglyceride rich refined avocado oil, comprises controlled dehydration of fresh avocado fruits having undergone preliminary transformations preferably at -50-120[deg]C, extraction of the oil from the dehydrated fruits, fractionation of oil to its triglyceride rich fraction and refining of the triglyceride rich oil fraction. Independent claims are included for: (1) the triglyceride rich refined avocado oil comprising a unsaponifiable fraction rich in sterols； and (2) a composition comprising the triglyceride rich avocado oil at 5-95 wt.%.
