Food additives are proposed that contain(a) glutaminic acid and(b) at least one nucleotide or the alkali metal and/or alkaline earth metal salts thereofand also optionally(c) aroma substances selected from the group formed by purines, polyphenols, 2-acetylpyrazine, 3-methylbutanol, 2-phenylethyl acetate, trimethylpyrazine and also mixtures thereof,(d) table salt,(e) sweeteners and/or(f) acidulants.
