PROBLEM TO BE SOLVED: To provide a medical image processing apparatus which generates an image that highlights the difference in color between a normal area and an abnormal area such as an atrophied area of gastric mucosa, and also to provide an operation method therefor and an endoscope system.SOLUTION: RGB image signals are input. The B/G ratio is calculated from the B image signal and the G image signal, and the G/R ratio is calculated from the G image signal and the R image signal. In a feature space defined by the B/G ratio and the G/R ratio, first processing for translating the coordinates of first to third areas is performed to move the coordinates of the first area into a reference area including the origin. In order to separate the coordinates of the first and third areas from each other, second processing for moving the coordinates of the first or third area is performed.
