Die Erfindung betrifft die Verwendung bestimmter Verbindungen aus der Strukturklasse der Vanillyllignane bzw. deren Salze und/oder Gemische zur Veränderung bzw. Die Erfindung betrifft auch ein entsprechendes Verfahren zur Maskierung unangenehmer Geschmackseindrücke, insbesondere bitterer, adstringierender und/oder metallischer Geschmackseindrücke.
