PROBLEM TO BE SOLVED: To provide a food stir-frying method by a drum type pan and a stir-frying machine which are capable of suppressing effect on finish of food.SOLUTION: The food stir-frying method uses the drum type pan 3 including scraping blades 5 inside a horizontal drum type pan 3, stirs food inside the drum type pan 3 by rotating the scraping blades 5, and scrapes off the food attached to a drum surface 3a, wherein, the scraping blades 5 have blade surfaces 5a set along the drum surface 3a for rotation, the food is moved from top to bottom by rotating the scraping blades 5 and a falling distance is reduced by causing falling to take place at the bottom side of the drum surface 3a by having a food slide over the blade surfaces 5a along with a rotational rise of the scraping blades 5.COPYRIGHT: (C)2013,JPO&INPIT【課題】食材の仕上がりへの影響を抑制することのできるドラム式鍋による食材の炒め方法及び炒め機を提供する。【解決手段】横型のドラム式鍋3内に掻取り羽根5を備え、掻取り羽根5を回転させてドラム式鍋3内の食材の攪拌並びにドラム面3aに付着した食材を掻き取るドラム式鍋3による食材の炒め方法であって、掻取り羽根5を、ドラム面3aに羽根面5aが沿うようにセットして回転させ、掻取り羽根5を回転させて食材を下方から上方へ移動させると共に、掻取り羽根5の回転上昇と共に食材が羽根面5aを滑り乗り越えてドラム面3aの下部側で落下を行わせて落下距離を減少させることを特徴とする。【選択図】図1
