PROBLEM TO BE SOLVED: To provide a method for manufacturing an extraction liquid which makes it possible to efficiently manufacture the extraction liquid.SOLUTION: A method for manufacturing a coffee with reduce bitterness includes extracting an extraction liquid from a plant raw material under pressurized condition, in which 70 wt% or more of the plant raw material has a grain size of less than 1000 μm.
