PROBLEM TO BE SOLVED: To provide a new food product in paste form, made from malted rice.SOLUTION: A mixture of fermentation materials having different particle size such as polished glutinous rice in granular form, granular or small granular nonglutinous brown rice, small granular burghul, and powdery starch flour is prepared, to which a small amount of common salt is blended. Water is added to the mixture which is then heated into a paste. Malted rice is added to the cooled paste, which is then kept at 60 to 65°C for 8 to 10 hours for fermentation. The fermented product is concentrated and then micronized into a size of 200 mesh or less. The micronized fermented product is then sterilized at 85°C for 30 minutes to produce a food product in paste form made from malted rice. The starch flour for use may be a mixture of sweet potato starch and arrowroot flour.COPYRIGHT: (C)2014,JPO&INPIT【課題】糀を使用したペースト状の新規な食品を提供する。【解決手段】粒状の精白もち米、粒状又は小粒状のうるち玄米、小粒状の挽き割り小麦、粉状のデンプン粉などの粒径の異なる発酵材料の混合物を用意し、これに少量の食塩を配合し、水を加えて混合し、加熱して粥状とする。これを冷却し、米糀を加えて60~65℃に保って8~10時間発酵させる。発酵物を濃縮してから、200メッシュ以下の大きさに微細化し、85℃で30分の殺菌を行いペースト状の糀を使用した食品とする。上記デンプン粉は、さつまいもデンプンと葛粉の混合物を使用することができる。【選択図】なし
