PROBLEM TO BE SOLVED: To provide compositions and methods for producing emulsions for nuclear magnetic resonance techniques and other applications.SOLUTION: The disclosure provides compositions and methods for producing emulsions. In certain embodiments, emulsions of the disclosure can be used for the detection of inflammation and cell tracking using MRI. The disclosure also provides methods for labeling, detection and quantifying cell numbers, in vivo. Emulsions of the disclosure can be used as an artificial blood substitute.
