Described herein is the use of resistant potato starch as an effective dietary supplement offering protection against multiple metabolic risk factors that are associated with cardiovascular disease and diabetes, including High Density Lipoprotein levels, blood glucose levels and insulin resistance. In particular, the resistant potato starch used is native, unmodified RS type 2 resistant potato starch.
