PROBLEM TO BE SOLVED: To make the texture of foam of whipped cream light, and to stabilize the foam.SOLUTION: Whipped cream is produced by putting whipped cream materials into a stirring machine, putting the stirring machine into a pressure tank, increasing the pressure inside the pressure tank to 0.3-1.0 MPa and whipping the materials by rotating the stirring machine under the pressurized state. The pressure tank may be vacuumed before the pressure increase in the pressure tank and nitrogen gas may be loaded thereafter. It is preferable that the whipped cream materials are cooled with ice water, etc. while the whipped cream materials are stirred. The stirring state is visible while the whipped cream materials are stirred. After the whipping is completed, the pressure in the pressure tank is gradually reduced.
