The present invention refers to a process that comprises the culture of strains of methylotrophic yeasts for producing and secreting polypeptides with phytase activity to the culture medium, it also comprising the obtention of preparations of polypeptides, as well as the application of these preparations for increasing the bioavailability of phosphorus and nutrients in ingredients rich in phytate. The particularity of the invention is that the process is characterized for producing polypeptides encoded by polynucleotides obtained in a synthetic manner and for performing at highest levels the phytase activity. This invention may particularly provide preparations of polypeptides with phytase activity in a pH interval of from about 2.5 to about 9 and temperature of from about 25°C to about 80°C, high thermal stability, stability to digestive proteases and the application thereof in different industrial applications.Esta invención se refiere a un proceso que comprende de un cultivo con cepas de levaduras metilotróficas para producir y secretar al medio de cultivo polipéptidos con actividad de fitasa, comprende además la obtención de preparaciones de los polipéptidos, así como la aplicación de estas preparaciones para incrementar la biodisponibilidad de fósforo y de nutrientes en ingredientes ricos en fitato. Una particularidad de esta invención es que el proceso se caracteriza por producir polipéptidos codificados por polinucleótidos que se obtienen de forma sintética y por rendir altos niveles de actividad de fitasa. En particular esta invención proporciona preparaciones de polipéptidos con actividad de fitasa en un intervalo de pH de 2.5 a 9 y de temperatura de 25 a 80°C, alta estabilidad térmica, estabilidad a proteasas digestivas y su aplicación en diversas aplicaciones industriales.
