Disclosed is a fatty acid composition having different fatty acid contents fromthose of a conventional one. Specifically disclosed is a fatty acid compositionproduced by culturing a host transformed with a recombinant vector which carriesa nucleic acid comprising a nucleotide sequence encoding a protein having a nucleotidesequence depicted in SEQ ID NO:1 or an amino acid sequence depicted in SEQ ID NO:2or a mutant of the protein having the equivalent functions. In the fatty acidcontents of the fatty acid composition, at least one of the following contentsand ratios i) to v) is higher than that in a culture product produced by culturinga host which is not transformed with the recombinant vector: i) the content ofoleic acid ii) the ratio of the content of oleic acid to the content of palmiticacid iii) the ratio of the total content of stearic acid and oleic acid to the contentof palmitic acid iv) the ratio of the total content of stearic acid and oleic acidto the total content of palmitic acid and palmitoleic acid and v) the contentof an n-6 fatty acid.
