The present invention disclosesoligosaccharide peptides with antioxidant activity, a manufacturing method thereof and an antioxidant formulation thereof. The manufacturing method ofthe oligosaccharide peptideswith antioxidant activitycomprises the following steps: extracting and precipitating mushroom-like plants to obtain polysaccharide peptides andadding hydrolase in the polysaccharide peptides for conducting hydrolysis of the polysaccharide peptides to obtainoligosaccharide peptides. The molecular mass ofthe oligosaccharide peptides is less than 3000 Dalton. Wherein, the scavenging free radical (α,α-diphenyl-β -picrylhydrazyl, DPPH) analysis is conducted with the oligosaccharide peptides, the scavenging free radical activity of the oligosaccharide peptides reaches 90.5-94.5% and the antioxidant activity of the oligosaccharide peptides reaches 77-84% when additions of the oligosaccharide peptides is 1-20mg/mL.本發明係揭露一種具有抗氧化功能之寡醣肽、其製造方法及其抗氧化配方。具有抗氧化功能之寡醣肽之製造方法包含:將一菇蕈類植物進行萃取及澱析處理以析出一多醣肽,添加一水解酵素於多醣肽中進行水解程序以得到一寡醣肽。寡醣肽之分子質量係小於3000道耳頓(Dalton,Da)。其中,將寡醣肽進行一清除自由基(α,α-diphenyl-β-picrylhydrazyl,DPPH)試驗,實驗結果顯示當寡醣肽添加量為1~20mg/mL時,寡醣肽之DPPH自由基清除能力可達到90.5~94.5%,且抗氧化能力可達到77~84%。S11~S13‧‧‧步驟
