A method for producing a structured polymer matrix, the method comprising: a-1) preparing at least one aqueous solution containing one or more food polymers, in which one or more food polymers are capable of experiencing at least two approach mechanisms, and in which the conditions are such that at least two approach mechanisms are not activated before an activation stage; a-2) treat at least one aqueous solution containing one or more food polymers to activate at least two approach mechanisms simultaneously; and a-3) allow at least two activated approach mechanisms to run until the structured polymer matrix is obtained, or b-1) prepare two or more aqueous polymer solutions, each solution comprising one or more edible polymers, in which one or more edible polymers of each solution are capable of experiencing less an approach mechanism, and in which the conditions of each solution are such that at least one approach mechanism is not activated in each solution; and b-2) combine the two or more aqueous polymer solutions to provide conditions in which any or more approach mechanisms occur simultaneously, or c-1) prepare a positively charged aqueous solution having a pH of about 2 to about 5 and a temperature of at least about 71.1 ° C (160 ° F), in which the solution comprises at least one food polymer capable of experiencing at least one approach mechanism, in which the conditions in the solution are such that at least one approach mechanism; c-2) preparing a second negatively charged polymer solution having a pH of about 8 to about 11 and a temperature of at least 71.1 ° C (160 ° F), in which the solution comprises at least one food polymer capable of experiencing at least an approach mechanism, in which the conditions in the solution are such that at least one approach mechanism is not activated; and c-3) combine the two hot polymer solutions to provide the conditions under which two or more approach mechanisms occur simultaneously, or d-1) prepare a first aqueous so
