The method comprises: a first step of leaving 12kg of soybeans in water for 6-12 hours and then grinding the soybeans； a second step of making bittern by mixing 30g of salt and 700ml of deep ocean water with 1300ml of water； a third step of inserting a fourth of soybean milk from the ground soybeans and then heating and stirring the milk； a fourth step of inserting and stirring a fourth of the soybean milk； a fifth step of stirring the soybean milk when the temperature of the soybean milk becomes 60C； a sixth step of inserting and stirring a fourth of the soybean milk when the temperature of the soybean milk becomes 85C； a seventh step of inserting and stirring a fourth of the soybean milk when the temperature of the soybean milk becomes 80C； an eighth step of stopping the heating and cooling the soybean milk up to 83-84C and stopping the stirring when the temperature of the soybean milk becomes 88C； a ninth step of removing yuba when the temperature of the soybean milk becomes 80-81C, and then, inserting the half of the bittern； a tenth step of removing the yuba 4-5 minutes later, and then, inserting the half of the bittern； and an eleventh step of solidifying the soybean milk for 40 minutes.본 발명은 두부 제조방법에 관한 것으로, 그 구성은, 콩 12kg을 6시간 내지 12시간 동안 물에 불린 후 분쇄하는 제 1단계와, 물 1300ml에 소금 30g 및 해양심층수 700ml를 혼합하여 간수를 만드는 제 2단계와, 상기 콩이 분쇄된 전체 두유의 1/4을 가열기에 투입하여 가열하고 교반하는 제 3단계와, 가열 중 상기 전체 두유를 1/4을 투입하고 교반하는 제 4단계와, 상기 두유의 온도가 60℃가 되면 교반하는 제 5단계와, 상기 두유의 온도가 85℃가 되면 상기 전체 두유의 1/4을 투입하여 교반하는 제 6단계와, 상기 두유의 온도가 80℃가 되면, 상기 전체 두유의 1/4을 투입하여 교반하는 제 7단계와, 상기 두유의 온도가 88℃가 되면, 가열을 종료하고 83 내지 84℃까지 냉각시키고, 교반을 종료하는 제 8단계와, 상기 두유의 온도가 80 내지 81℃에서 유바를 제거하고, 상기 간수의 1/2를 투입하는 제 9단계와, 상기 4 내지 5분 후에 유바를 제거하고, 상기 간수의 1/2를 투입하는 제 10단계와, 40분 동안 굳히기를 진행하는 제 11단계를 포함하는 것을 특징으로 한다.
