PROBLEM TO BE SOLVED: To provide a method for manufacturing oils and fats which are poor in the content of an XXX-type triglyceride and that of an XX-type diglyceride and are rich in the content of an XUX-type triglyceride, as is efficient and suitable for the industrialization.SOLUTION: The method for manufacturing oils and fats, which are poor in the content of the XXX-type triglyceride and that of the XX-type diglyceride and are rich in the content of the XUX-type triglyceride as is more safe and efficient and besides suitable for the industrialization, comprises crystallizing and removing the XXX-type triglyceride and the XX-type diglyceride which are contained in the oils and fats that contain 50-90 mass% of the XUX-type triglyceride among the whole triglycerides, in the presence of the lower alkyl esters of fatty acids.COPYRIGHT: (C)2010,JPO&INPIT【課題】本発明の課題は、XXX型トリグリセリド及びXX型ジグリセリド含量が低く、XUX型トリグリセリドに富んだ油脂の、効率的で工業化に適した製造方法を提供することである。【解決手段】全トリグリセリド中にXUX型トリグリセリドを50~90質量%含有する油脂に含有されるXXX型トリグリセリド及びXX型ジグリセリドを晶析除去するにあたり、脂肪酸低級アルキルエステルの存在下で晶析除去することによって、より安全かつ効率的で工業化に適したXXX型トリグリセリド及びXX型ジグリセリド含量が低くXUX型トリグリセリドに富んだ油脂の製造方法を提供することができる。【選択図】なし
