FIELD: food industry.SUBSTANCE: invention relates to the food industry, namely to a method for preparing Kabardian potato. At the bottom of the frying pan put onion cut into two parts, cut part down, and tomatoes, cut parts down. Top with diced potatoes, pour it with salted water and sunflower oil. Salt the diced potatoes. Close the frying pan with a lid with a hole and cook it under high heat for 32–35 minutes without removing the lid and stirring. Turn off heat and allow the cooked dish to slowly cool with the lid closed for 10÷15 minutes before serving. For 1 kg of diced potatoes 160÷180 ml of salted water and 80÷100 ml of sunflower oil is used. Cubes of dried potatoes are not deformed during the preparation.EFFECT: proposed method of cooking potatoes allows to increase the taste of fried potatoes, reduce the time and cost of cooking.4 cl, 1 dwg
