PURPOSE: A method for removing pigment of red beet and enhancing physiological activity by radiation is provided to be used in a cosmetic, medicinal, or health food composition. CONSTITUTION: A method for removing pigment and maintaining physiological activity of red beet extract comprises a step of irradiating radiation to the red beet extract. A method for enhancing anti-wrinkling activity of the extract comprises a step of irradiating radiation to the extract. The extract is prepared by water, alcohol or mixture thereof. The alcohol includes low alcohol of C1-C4. The radiation includes gamma ray, electronic beam, UV or X ray. The pigment includes betanin or isobetanine.
