The present invention relates to a process for upgrading of molluscs bivalves, characterized by the fact that it comprises the following steps which consist in: - has / have to undergo said mollusc, fresh or thawed, an enzymatic hydrolysis in aqueous medium； - b / at the end of this hydrolysis, to separate the liquid phase obtained of the shells of said mollusc bivalves, so that it is recovered on the one hand a hydrolysate aqueous of flesh and, on the other hand, of the shells, cleared of any organic material.
