A method of inhibiting the isomerization of the reduced saccharide in an aqueous solution containing a reduced saccharide in the heat treatment of the aqueous saccharide solution by acidifying the aqueous saccharide solution prior to its heat treatment, and a heat treatment containing the reduced saccharide for the production of a biological product.
