PROBLEM TO BE SOLVED: To provide a method for safely and efficiently mass-producing a sesamin hydrolyzate having amyloid formation inhibition activity and an amyloid formation inhibitor composed of a sesamin hydrolyzate obtained by the method as an active ingredient.SOLUTION: The method for producing a sesamin hydrolyzate includes hydrolyzing sesamin derived from sesame seed with water in a subcritical state so that a mixture of sesame and water has an arrival temperature of 200-350°C. The method for producing a sesamin hydrolyzate includes a first process and a second process. The first process is a process for mixing sesamin derived from sesame seed with water, hermetically sealing the mixture in a pressure-resistant container, heating the container so that the mixture in the pressure-resistant container has an arrival temperature of 200-350°C and keeping the container at the temperature for 0-120 minutes.
