PROBLEM TO BE SOLVED: To solve a problem which crystallization of oils and fasts is inefficiently and extremely time-consuming.SOLUTION: This fractionation method for edible oils and fats is characterized in that raw material oils and fats comprising plural oil and fat components different in composition are melted or dissolved and the raw material oils and fast are simultaneously pressurized cooled so that a part of crystal of the oil and fat components is crystallized and the crystallized solid fats are separated. A crystallization time is extremely shortened by pressurization in the crystallization of oils and fast and the fractionation of oils and fats can be continuously and efficiently carried out.COPYRIGHT: (C)2002,JPO【課題】 油脂の分別は、油脂の晶析に非常に時間がかかり効率が悪かった。【解決手段】 組成の異なる複数の油脂成分を含む原料油脂を融解または溶解し、この原料油脂に加圧および冷却を同時に行うことで一部の油脂成分の結晶を晶析させた後、晶析した固体脂を分離することを特徴とする食用油脂の分別法であり、油脂の晶析の際に加圧を行うことで、晶析時間が大幅に短縮され、連続的に油脂の分別を効率良く行うことが可能となる。
