PROBLEM TO BE SOLVED: To sterilize a food and drink material without excessively heating it.SOLUTION: A sterilizing apparatus includes: a thyristor that rectifies an alternating current from the outside into a direct current an inverter that converts the direct current to a high-frequency current and a transformer that boosts the high-frequency current and applies a high voltage pulse to an electrode pair. The high voltage pulse is applied to a food and drink material supplied between the electrode pair to sterilize the food and drink material. In a state where the thyristor is activated, the high voltage pulse is applied to the electrode pair by controlling on-off of the inverter. The on-off control of the inverter accelerates a start-up speed of the high voltage pulse applied to the electrode pair to prevent the food and drink material from being excessively heated.COPYRIGHT: (C)2016,JPO&INPIT【課題】飲食物材料を過度に加熱することなく、飲食物材料を殺菌処理する。【解決手段】この殺菌装置は、外部からの交流電流を直流電流に整流するサイリスタと、直流電流を高周波電流に変換するインバータと、前記高周波電流を昇圧して高電圧パルスを電極対に印加するトランスとを有し、電極対の間に供給された飲食物材料に高電圧パルスを通電して、飲食物材料を殺菌処理する。高電圧パルスは、サイリスタを起動させた状態のもとで、インバータのオンオフを制御して電極対に印加する。インバータをオンオフ制御することにより、電極対に印加される高電圧パルスの立ち上げ速度を迅速にして、飲食物材料が過度に加熱されることが防止される。【選択図】図5
